Wine Information

Being rosé fans, we decided to use a portion of our estate Grenache and Syrah fruit to produce this wine. We made this rosé similar to how we make our white varietals, with the juice removed immediately from the skins. The juice was then cold-settled overnight to remove the solids. We inoculated it with the same yeast that we selected for our Sauvignon blanc because this yeast produces very estery, fruity wines. The wine was cold fermented at 50º F for 45 days. The wine is a 1.5l Astra pack. Once open, it can be held in the refrigerator for up to 6 weeks. It has been a big hit in our tasting room and enjoyed by many customers.
